Chicken recipes are a dime a dozen in Amish kitchens. Chicken is a relatively inexpensive, readily available, easy-to-fix source of protein. So, yeah, if you can give a busy Amish housewife a simple chicken recipe that is flavorful, it will quickly become a family favorite.

And there are literally thousands of recipes out there and Amish kitchens for how to prepare chicken. Many of them are similar. Few are very difficult. You can roll chicken in butter and cornflakes and bake it. You can fry it in butter and cornflakes. You can dump co*ke over it you can roll it in crumbs you can pour molasses over it, and on and on and on and on.

I like this recipe because it truly is an all-in-one meal that just dirties one skillet, so you don't have a bunch of dishes. The green beans add nice color and flavor. Green beans and chicken wouldn't typically be my first choice, but it works in this recipe.

The chicken can be prepared in any kind of skillet. Most Amish cooks would use a cast-iron skillet, which is what I recommend. My next choice would be a stainless steel skill. My parents made it in some sort of non-stick skillet.

Mushrooms are one of my favorites and make this chicken dish nice and "mushroomy."

One of the biggest flavor-enhancers for this dish is a packet of Lipton onion soup mix. Just sprinkle it over the chicken and let it do the work. Yes, you will find plenty of Amish cooks using that type of seasoning shortcut.

And, yes, I can do math. I'm not sure why it this recipe is called "Amish 15-Minute Skillet Chicken Supper", it's more like 30. But, well, if you're quick maybe you can pare down the time, so I'll keep the name. That is what the Amish woman who gave the recipe to me called it.

🍗 Amish 15-Minute Skillet Chicken Supper

  • 1 (14.5 ounce) can green beans, drained
  • 3 - 4 chicken breasts
  • 1 (7 ounce) can of mushroom stems and pieces, drained
  • 1 envelope Lipton Onion Soup Mix

📋 Instructions

  1. Place chicken skin side down in 12-inch nonstick skillet over medium-high heat.
  2. Pour onion soup mix over chicken and spread it evenly.
  3. Cook without moving 8 to 10 minutes, until skin is deep golden brown.
  4. Add mushroom pieces.
  5. Turn chicken over; reduce heat to medium, and cook 10 to 12 minutes or until deep golden brown.
  6. Add green beans.
  7. continue cooking over medium heat 15 to 20 minutes or until juice of chicken is clear when thickest part is cut (at least 165°F).
  8. Remove skillet from heat, and transfer chicken to plate; cover and keep warm
