Making egg noodles using a KitchenAid mixer and pasta cutters is a quick and easy process that produces delicious results

  • Dough Hook Attachment

  • Pasta Roller Attachment

  • Pasta Cutter Attachment

Ingredients

  • 2 Cups All-Purpose Flour organic, unbleached
  • 1/2 teas Salt
  • 3 large Eggs

Instructions

  • In the bowl of your KitchenAid mixer, combine the flour and salt. Add the eggs and mix on low speed until the dough comes together.

  • Once the dough has come together, switch to the dough hook attachment and knead the dough on medium speed for about 5 minutes or until it becomes smooth and elastic.

  • Divide the dough into 4 equal portions and wrap each portion in plastic wrap. Let the dough rest for at least 30 minutes at room temperature.

  • Once the dough has rested, attach the pasta roller attachment to your KitchenAid mixer. Take one of the portions of dough and flatten it with your hands until it is about 1/2 inch thick.

  • Set the pasta roller attachment to the widest setting and run the dough through the rollers. Fold the dough in half and run it through the rollers again. Repeat this process several times until the dough becomes smooth and elastic.

  • Adjust the pasta roller attachment to the next thinnest setting and run the dough through the rollers. Repeat this process, adjusting the rollers to a thinner setting each time, until the dough is rolled to the desired thickness.

  • Once the dough is rolled out to the desired thickness, attach the pasta cutter attachment to your KitchenAid mixer. Run the sheet of dough through the pasta cutter to create your desired shape of noodles.

  • Once the noodles are cut, you can cook them immediately or let them air dry for long term storage.

  • To cook the noodles, bring a large pot of salted water to a boil. Add the noodles and cook for 2-3 minutes or until they float to the surface.

  • Drain the noodles and serve them immediately with your favorite sauce or toppings.
