Oven baked fried chicken and roasted potatoes make a great dinner combination.

The oven baked fried chicken creates a great flavor with minimal effort. Also, the texture of the breading is softer than it would be if it were just fried.

The roasted potatoes are a family favorite that ranks way up there on the simplicity level. Always a bonus. When I want to throw something in the oven quickly, often these are the potatoes that I will make. You can change up the spices according to your tastes, even add some Parmesan cheese.

Ingredients

  • olive or coconut oil (enough to coat bottom of skillet)
  • Let Sit:
  • 6 pieces of chicken
  • 1 cup milk
  • Flour Mixture:
  • 1 cup flour
  • 1 tsp [url href=”http://amzn.to/2lNbHxq” target=”_blank”]dried oregano[/url]
  • 1 tsp [url href=”http://amzn.to/2llAM1l” target=”_blank”]paprika[/url]
  • 1 tsp [url href=”http://amzn.to/2lSUK0x” target=”_blank”]garlic powder[/url]
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Pour some milk over the chicken and let sit for 1 hour in the refrigerator (Some people like to add a bit of hot sauce at this stage).
  2. Prepare flour by mixing 1 cup flour, as the oregano, paprika, garlic powder, salt and pepper.
  3. Heat olive or coconut oil in a large skillet (enough to coat the bottom of the pan).
  4. Coat chicken in flour and place in heated skillet.
  5. When chicken is brown (but still not done), put in a glass container. Cover lightly.
  6. Bake at 400 degrees F for an hour, or until when you stick a fork in a thick part of the chicken, the juices run clear.

  • 2-3 tablespoons olive oil , or coconut oil for the skillet

Flour Mixture

  • Mix the flour, oregano, paprika, garlic powder, salt and pepper in a bowl.

    1 cup unbleached all purpose flour, 1 teaspoon garlic powder, 1 teaspoon oregano, 1 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon pepper

  • Heat olive or coconut oil in a large skillet (enough to coat the bottom of the pan).

    2-3 tablespoons olive oil

  • Coat chicken in flour and place in heated skillet and brown.

  • When chicken is brown (it won't be cooked in the middle), put in a 13x9in glass dish. Cover with foil and bake at 400 degrees Fahrenheit for an hour, or until when you stick a fork in a thick part of the chicken the juices run clear.

Roasted Potatoes

Don’t forget the roasted potatoes. It’s great to be able to put 2 dishes in the oven and have dinner mostly done. Add some roasting vegetables and you’re set!

  • Slice the potatoes into bite sized pieces.

    6 medium sized potatoes

  • Drizzle with olive oil (enough to make sure they do not stick together). Add salt, basil, garlic powder, and paprika. Mix to coat.

    2 tablespoons olive oil, 1 teaspoon basil, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon salt

  • Cover and put in a 400 degree Fahrenheit oven for 30 minutes or until potatoes are soft. Uncover and bake longer if you want to make them more crispy.
